For Dominique Fahey the opening of a completely revamped Smithy's meant the chance to use her creative and artistic skills to broaden Smithy’s appeal to an ever widening clientel.

A world traveller and gourmet with a keen appreciation of what appeals to discerning diners on every continent, she now welcomes being able to work alongside the chef, Memo, as he devises new dishes for Smithy's ever changing daily menu.

In addition to Smithy's, Dominique is also owner of one of the West End's leading caterers, Harringtons of Berkeley Square, which has an enviable reputation for supplying quality business lunches and corporate buffets to some of the biggest companies in Mayfair.

Memo  Head chef

The variety of exciting new dishes to complement Smithy's very popular menu are the work of the head chef, Memo, who has had a wide experience in some of London's leading restaurants.

His early training honed his skills in the preparation of traditional French cuisine, which he was to put to great use in his 15 years in the kitchens of premier establishments such as L'Escargot, Sugar Reef and Criterion.

Now he enjoys the opportunity to add his own highly individual touches to some of the world's classic dishes as well as devising challenging and innovative recipes to satisfy his new clientel at Smithy's, who have given an enthusiastic reception to the ground breaking tastes he has introduced.
